Grapefruit Carnitas

Elevate your carnitas game with a tangy twist using R.W. Knudsen Family® Organic Just Grapefruit Juice. This recipe infuses tender pork with the refreshing citrus flavors of grapefruit, creating a zesty and unforgettable dish perfect for any occasion!

Ingredients

  • 4-5 pounds skinless pork shoulder

  • 1 Tbsp kosher salt

  • 4 tsp ground cumin

  • 2 tsp chili powder

  • 2 tsp garlic powder

  • 2 tsp dried oregano

  • 2 tsp onion powder

  • 1 tsp freshly ground black pepper

  • 1 cup R.W. Knudsen Family® Organic Just Grapefruit Juice
    tortillas, flour or corn

  • 1 small red onion, diced

  • Fresh cilantro, roughly chopped

  • Hot sauce (optional)

  • Limes, cut into wedges

Directions

  1. Cut pork shoulder into six large pieces.

  2. Season all sides with the spices, salt and pepper. Add grapefruit juice to the slow cooker and place pork pieces on top.

  3. Cook on low for 6-8 hours (or high for 3-4 hours), until pork is fall apart tender.

  4. Place cooked pork on a baking sheet and use forks to pull it apart into large pieces. Pour 1/2 cup of the cooking liquid over the shredded pork.

  5. Place in the oven under the broiler until it crisps up. About 3-5 minutes.

  6. Serve crispy carnitas in your favorite tortillas topped with cilantro, chopped onion, hot sauce and a wedge of lime. Enjoy!

    Tip: Don't have a slow cooker? Carnitas can also be cooked in a heavy stock pot in the oven at 325ºF for 3-4 hours.
